Summer Greek Salad

Looking for a salad for the summer that doesn’t take much time in the kitchen? Then look no further than this summer greek salad. It literally just takes minutes to throw together and the results are refreshing and healthy. This salad is a testament to the classic summer garden of radishes, tomatoes, and cucumbers. You can make a simple yogurt sauce with lemon, dill, mint, or in this case I added some sumac, or if you have all of those ingredients you can add all of them. I don’t have feta on the picture but I would recommend manouri cheese if you can find it, to me it is less salty than feta and the flavor is amazing! Here is the recipe for a quick and easy summer greek salad, I hope you enjoy it!


Recipe Ingredients

1 cup of yellow cherry tomatoes cut in half

2 small purple daikon radishes sliced thin

1 cucumber peeled, cut in half and sliced

1 cup of sumac yogurt

1/3 cup of kalamata olives pitted

1/4 cup of fresh mint leaves

Olive oil

Salt and pepper

5 oz of manouri or feta cheese (optional)

Recipe Instructions,

Spoon a few big spoonfuls of yogurt down on the plate. Then add the cucumber slices. Season them with salt and a little olive oil. Next add the halved tomatoes and season with salt and olive oil. Then season the radishes with salt and place on top. Add the olives (cheese), and mint to the dish. Drizzle everything with olive oil and fresh cracked pepper, serve and enjoy!
