Beet Salad with Cilantro and Queso Fresco
Here is another simple beet salad using vegetables and herbs from the garden. If you are looking for a simple recipe using beets and want to take the flavors in latin direction then this recipe is perfect. I got some great queso fresco at the mexican market in L.A. and had some left over from a latin themed party I did. In this recipe I just wanted to use a few ingredients and let those ingredients really shine together. That is really how this recipe evolved and came about. Nothing to fancy here just having a few ingredients and let them speak for themselves. Sometimes simple dishes are the best.
3 whole red beets boiled, peeled, diced
2 oz queso fresco
1 tbsp of chopped cilantro plus leaves to garnish
3 tbsp extra virgin olive oil
1 lime juiced
Salt and Pepper
Take diced beets and place in a mixing bowl. Drizzle the beets with 2 tbsp of olive oil, lime juice, and chopped cilantro. Season with salt and pepper. Place on a plate and drizzle the beets with the remaining tbsp of olive oil. With a zester or microplane grate fresh queso fresco over the beets. Garnish with some cilantro leaves and enjoy. Simple and easy beet recipe with a lot of flavor.
