White Bean Hummus with Crudite
How to make White Bean Hummus,
Here is a simple recipe that can be a great appetizer or snack any day of the week. I think hummus is a condiment or snack that is universal and most people like it. This is a basic hummus recipe using white beans instead of garbanzo beans. Feel free to use whatever bean you have on hand they can be interchangeable but just not they will each have their own distinctive flavor. Like all recipes, there is room for alternating ingredients and spices. This is a basic recipe but still very delicious. Here is the recipe I hope you enjoy it!
Recipe Ingredients
1 1/2 cup of dried or fresh white bean
5 cups of water
1 onion charred
1 sprig of thyme and bay leaf
2 garlic cloves
2 tsp of salt
White bean hummus
4 cups of cooked white beans or alternatively 2 cans of white beans
3 small cloves of garlic
4 tbsp of tahini
3/4-1 cup of olive oil
1 lemon juiced
salt and pepper
Recipe Instructions
How to cook Beans,
In a medium sized pot place white bean with all of its ingredients and place on top of the stove on medium high heat. Bring to a boil and then turn down to a light simmer and cover. Cook for 20-25 if the beans are fresh or 55-60 minutes if dried or until the beans are tender and cook through. Set aside to cool.
How to make hummus,
Place white beans, garlic, and tahini in a food processor. Puree for 15 seconds, then while the processor is still running start add the water and olive oil. Alternating a little of water and then a little of the olive oil. Once the beans have a really smooth consistency you can add the lemon juice. Stop to scrape the sides of the processor and finish with salt, and pepper. Place in a bowl and drizzle with a little extra olive oil. Place on a platter with your favorite raw vegetables. Serve and enjoy!
