Oatmeal Raisin Muffins with Apple and Cinnamon

Have you ever made too much oatmeal for breakfast? Or the kids don’t touch the bowls you have made for them? Especially during these tough times during the covid-19 pandmaic, Don’t throw it out! Save it and reuse it. Why not turn it into some muffins. Easy, simple and delicious. Right now apple, raisin, cinnamon oatmeal is what my kids and boss have at least 3-4 times a week. It is easy to make too much or have some leftovers. Put it to use and repurpose it. That is the trick to all great cooks. Here is how to make leftover oatmeal raisin muffins. I hope you enjoy it!

Recipe ingredients

3/4 cup of oat milk

1/2 cup of oil

2 eggs

1 cup of brown sugar

1 tbsp of vanilla extract

1 1/2 cups of leftover oatmeal (cooked with 3 tbsp. raisin and 1/2 apple small diced )

2 1/4 cup flour

1/2 tsp of salt

1 tsp of cinnamon

1 1/2 tbsp of baking powder

1/2 cup of raisins

3 tbsp of raw oats

Recipe Instructions

Preheat oven to 350 degrees.

Place milk, eggs, oil, sugar, and vanilla into a stand mixer with the paddle attachment. Mix on low speed for about a minute or until everything is well combined. Then add the leftover oatmeal and mix for 20 seconds. Next add the dry ingredients, flour, salt, cinnamon, baking powder, and raisins. Mix for 20-30 seconds until the batter comes together. Take a muffin pan and spray with non stick spray or use muffin parchment cups. Fill each muffin mold 3/4 of the way full. Continue until you have the muffin pan filled, top each muffin with a sprinkle of raw oats. Then place into the preheated oven and bake for 20 minutes. Take out and allow to cool for at least 5 minutes. Serve and enjoy!
