Key Lime Cake

Here is a great alternative to a key lime pie. How about a key lime cake? if you like the pie there is no reason not to like the cake version. Same flavors with a little different look. The recipe uses the chiffon cake which is light and delicious. The filling is an easy lime curd and the “icing” is a toasted meringue. What could go wrong with those combinations. Recipe Ingredients

Chiffon Cake

1/3 cup of vegetable oil

4 egg yolks

1/2 cup water

1 tbsp of vanilla paste

7 oz of cake flour sifted

7 oz of sugar

2 tsp of baking powder

1/2 tsp salt

4 egg whites

1 lime zested

Lime Curd

1/2 cup lime juice

2 tsp zest

1/2 cup of sugar

3 eggs

1 stick of butter

Meringue

1/2 cup of egg whites

1 cup of sugar

For the chiffon cake, Preheat oven to 350 degrees

Line 2 cake pans with parchment paper, then whip vegetable oil with egg yolks and lime zest.  Add the water and vanilla.  Then combine cake flour, 1/3 of sugar, baking powder and salt.  Gradually add that to the egg yolk mixture and whip at high speed for 1 minute.  Then place in a bowl.  Whip egg whites to a foam and gradually add the remaining sugar whipping to stiff peaks.  Fold the meringue into the cake batter. Divide the batter between both pans and place in the oven.  Bake for 20 to 25 minutes until the cake is done.  Allow to the cakes to cool and then unmold.

How to make Lime Curd,

Place all the ingredients into a small sauce pot and turn on medium low heat.  Whisking continually until the curd starts to thicken.  Should take about 10 minutes or so.  Strain into a bowl and place in the refrigerator to cool down.   After its cool place into a squeeze bottle or pastry bag.

For the meringue

In mixing bowl heat egg white and sugar over water bath until it reaches 160 F. Then immediately place in a stand mixer and whip for 5 minutes or until cool.   Set aside

Take the chiffon cakes out of the cake pans after they have completely cooled. You can trim the tops of cake if desired to make them flat. Place one of the cakes down on top of a cake stand or plate. Then add a good layer of lime curd on top of the cake ( alternatives is you could brush a flavored syrup to the cake or a jam if desired). Then add the second layer of cake on top. Then add meringue on the outside and sides of the cake using a pastry spatula to create a smooth “icing”. Take a torch and toast the meringue. Once toasted place the cake in the refrigerator for at least an hour! Serve and enjoy!
