Cinnamon Rolls
Cinnabon used to be my go to sweet when I had a metabolism that could handle all those calories. This recipe is for those special occasions where you can indulge a bit. Certainly wouldn’t be a recipe that I would make every week but on those certain occasions where it calls for a little something special this would be the go to recipe. This might be intimidating at first but you will see it just takes a little bit of time and the end result will be fantastic. Here is the recipe for the best cinnamon rolls ever! Recipe Ingredients
Enriched Sweet Dough
1 cup of milk
1 stick of butter room temp
2 eggs room temp
2 tbsp of vanilla bean paste
1/3 cup sugar
1 packet of yeast
3 1/4 cup of all purpose flour or bread if you have it, plus more (1/4 cup)
1 tsp of salt
1 cup of packed brown sugar
3 tbsp of cinnamon
1/3 cup of butter softened
8 oz cream cheese room temp.
1/2 cup unsalted butter room temp.
3 cups confectioners' sugar
1 teaspoon vanilla extract

How to make Enriched sweet dough,
In a glass measuring cup add 1 cup of milk. Place in the microwave to heat up until the internal temperature is around 105 degrees. Add 1 tbsp of sugar and the yeast and mix well. Allow to activate the yeast for 5 minutes. Then add the eggs, butter, and vanilla bean paste and mix well. Add the flour and salt and mix until it forms a smooth dough if the dough is a little wet just add additional flour. Cover and let it rise for about and hour to an hour and a half depending on how warm your room is. Then punch down the dough and cut it in half. Roll the dough into a 1/4 inch thick rectangle. Then take a spatula and spread the softened butter evenly all around the dough. Combine the brown sugar and cinnamon in a bowl and distribute it liberally on top of the butter so it covers the whole rectangular dough except 1/2 inch from the edges. (that way when you roll it up the cinnamon roll you can seal the edges). Starting at one end of the dough, roll the dough up into a "log". Then slice the log into 1 inch slices. Then place the slices into a greased baking dish leaving space in between the slices. Cover with a towel and let them proof for an hour.
Place the cinnamon rolls in a preheated 375 degree oven. Bake for about 17-19 minutes or until light golden brown; making sure to rotate the pan halfway during the baking process . Take out and allow the cool for at least 10 minutes. Meanwhile in a small stand mixing bowl mix cream cheese, butter, powdered sugar, and vanilla, Beat with a paddle attachment until well combined. Once cooled slightly slather the icing all over the cinnamon rolls. Serve and enjoy
